Don't let the length of this recipe deceive you... It took me 15 minutes and it's super easy!
(For one serving)
1 zucchini (grated)
1 tsp Himalayan pink salt
2 tablespoons brown rice flour
1 small stalk cilantro
1 egg
1/2 tsp cayenne pepper
1 tsp black pepper
2 Tbs coconut oil
Grate zucchini and put separate in a bowl, leaving for ten minutes. Combine all other ingredients in separate bowl. Squeeze water out of zucchinis after ten minutes is up. Heat oil on stove over medium heat, and cook fritters until golden or crispy. They're great served with tomatoes!!
